In the late 1800s, thousands of brick ovens provided bread and baked goods across the United States. The oven's quality cooking ability is due to the storage of heat in the dense bricks, providing consistent cooking in large, correctly constructed ovens. Built from original designs, our brick oven utilizes cast pieces approximately 100 years old. The oven must be constantly maintained at a high temperature (700 degrees), and is fired every day, including Christmas and Thanksgiving --the only days we are closed. It weighs 20,000 pounds, and consumes three cords of oak wood every month.
